COPYCAT CRACKER BARREL MEATLOAF







My family loved it! Do it without the green peppers because we do not like them, fry the onions with a little minced garlic. Also added some Worcestershire sauce shakes to the meat mixture and sauce.

Ingredients
  • 1/2 cup milk
  • 3 eggs
  • 1/2 cup finely chopped onion
  • 4 oz shredded sharp cheddar cheese
  • 1 tsp salt
  • 1/4 cup finely diced green pepper can be omitted if you prefer
  • 1/4 tsp pepper
  • 45 (1 1/2 sleeves) Ritz crackers crushed
  • 1 1/2 lbs lean ground beef

Topping:
  • 1 tsp yellow mustard
  • 1/2 cup brown sugar
  • 1/2 cup ketchup

Instructions

First, Preheat the oven to 350. Line a baking sheet with parchment paper or aluminum foil.

Then, Mix the ingredients of the filling in a small bowl; put aside.

In large bowl, beat eggs then add bread crumbs, onion, green pepper, milk, salt, pepper and cheese; stir to combine.

Add the ground beef and mix well. Unmix the meatloaf mixture on the prepared dish; shape into a loaf.

Bake for 30 minutes, then spread the filling over the meatloaf. Bake for another 30 minutes or until center is 160.

Let stand for 5 to 10 minutes to rest, then slice and serve.
