Lamb Meatball and Bean Curry | Slimming World






This recipe is gluten free, dairy free, Slimming World and Weight Watchers friendly



Ingredients

for the meatballs:
·      455g/1lb of lean lamb mince - 20 syns*
·      1 garlic clove, crushed
·      1 tsp of onion powder
·      1 tsp of cumin
·      fresh coriander, finely chopped
for the curry:
·      1 onion, finely chopped
·      2 carrots, finely diced
·      2 cloves of garlic, crushed
·      1 tsp of fresh minced ginger
·      1 bay leaf
·      2 cloves
·      1 tbs of ground coriander
·      2 tbs of ground cumin
·      0.5 to 1 tsp of chilli flakes (or use 1-2 fresh deseeded red chilli, depending on spice level you like)
·      1 tsp of turmeric
·      1 cup (240ml) of passata (or crushed tomatoes)
·      2 cups (480ml) of lamb or chicken stock
·      400g of mixed beans, canned
·      spray oil
·      Salt and Pepper to season
·      fresh chopped coriander (optional)

Instructions

1.  In a large bowl, add all the ingredients for the meatballs and bind together thoroughly, form into 16 equal size meatballs
2.  Spray a frying pan over a medium-high heat with spray oil and brown on all sides, remove and set aside.
3.  respray the frying pan with spray oil, add the onion, garlic and ginger and gently fry for approx 2 mins until softened.
4.  Add the carrots and all spices and stir to evenly coat.
