Sweet Potato & Black Bean Quinoa

I made this
today for lunch & it is delish!! My husband and I both loved it.
INGREDIENTS
- 2 tsp. cumin
- ½ tsp. dried thyme
- 1 cup frozen corn, thawed
- 1 tsp. chili powder
- ½ cup green onions, chopped
- 2 cups vegetable broth
- 1 tsp. garlic salt
- 4 cups sweet potatoes (1/2-inch cubes)
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup uncooked quinoa, rinsed
INSTRUCTIONS
First, Preheat
oven to 375 degrees F.
Then, Combine
all ingredients except green onions in a 9x13 ovenproof baking dish covered
with baking pan and covered with aluminum foil.
Remove the
aluminum foil and continue cooking for another 15 to 20 minutes until the
liquid is almost completely absorbed and the potatoes are tender.
Take out of
the oven and let the pan rest for 5 minutes so that all remaining liquid can be
completely absorbed and sprinkled with green onions. Happy Cooking TimeJ
