Italian Sausage Tortellini

Italian Sausage Tortellini

This sausage tortellini soup is a tomato-based soup loaded with vegetables, Italian sausage, and cheese tortellini. It's the perfect soup for cold weather and freezing!


  • 3/4 cup chicken broth
  • 2 cups diced onions
  • 1/2 cup regular or heavy cream
  • 2–3 cloves garlic, minced
  • salt and pepper to taste
  • 1 (14.5 ounces) can petite diced tomatoes
  • 2 cups fresh baby spinach, loosely packed
  • 1 tablespoon olive oil
  • 1 lb mild Italian sausage
  • 9 ounces tortellini (fresh or frozen)


First, heat olive oil in a 12-inch skillet over medium heat. When the oil is very hot, add the onions. 
Squeeze the sausage from the end of the tie to remove it from its casing and add it directly to the pot. Use a spatula to break the sausage into small pieces. Increase the heat to medium-high and cook, stirring occasionally, until the sausage is golden brown. Reduce the heat to low, then add the garlic and stir until fragrant, about 30 seconds.

Then, add the broth, tomatoes, cream, and tortellini to the pan. Stir to combine. Increase the heat and bring to a boil.

Cover, then reduce the heat and simmer for 15 minutes until the tortellini are tender and heated through. Taste the sauce and add a lot of salt and pepper to taste. I used 1 teaspoon of salt and 1/2 teaspoon of pepper. Add the spinach and stir until softened and wilted. Happy Cooking Time.
