One Pot Ground Beef Stroganoff

This stroganoff was incredible. I added cooked mushrooms and it was a hit with the whole family!

  • 1 lb ground beef
  • 2 teaspoons paprika
  • 1/2 cup diced onion
  • salt and pepper
  • 8 oz dry rotini
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • fresh parsley, for serving
  • 4 cups low sodium beef broth*
  • 3 tablespoons extra-virgin olive oil, divided
  • 8 oz crimini mushrooms, sliced


First, Heat 1 tablespoon olive oil over medium heat in a pan or large skillet. Add the mushrooms and cook until tender, about 5 minutes. Season with salt and pepper, then remove from pan in a bowl and set aside.

Then, Heat the 2 tablespoons of oil in the same pot. Add the onion, salt and pepper and cook until translucent, 4-5 minutes. Stir in the garlic and cook until fragrant for 30 to 60 seconds. Add the ground beef and continue cooking, breaking it with a spoon during cooking, until it is golden and cooked, about 5 minutes. Sprinkle paprika on top and mix.

Pour the beef broth and pasta *. Bring to a gentle boil then cover the pan. Continue cooking, stirring often, until pasta is al dente, 17-20 minutes. Remove the pan from the heat and stir in the mushrooms and sour cream.

Serve garnished with fresh parsley. Happy Cooking TimeJ
