Kesar Makhana Phirni

- 1/4 cup Sugar
- 1 litre Full Fat Milk
- 1 tsp Cardamom Powder
- 2 cups Makhana
- 10-12 strands Saffron
- 2 tbsp Ghee
- Almond and Pistachio slivers for Garnishing
First, Heat the ghee in a pan.
Then, Once the ghee is hot, add the makhane and fry it until it is crisp.
Remove the pan from the heat and let the Makhane cool.
Crush the makhane to obtain a coarse powder.
Heat the milk in a saucepan.
Once the milk comes to a boil, add some saffron sprigs.
Let the milk cook over low heat until it is halved.
Add the Makhana powder in the milk and cook until the mixture thickens to a slightly thicker phirni consistency than the kheer.
Add sugar and cardamom powder and cook another minute.
Remove the phirni from the heat and transfer it to clay bowls.
Cool the phirni for a few hours before serving.
Decorate with almonds and pistachios.
