BEEF AND POTATO CURRY
Enjoy the evening, with this delicious beef and potato curry, leaving you with many spices to enjoy some poppadum.
500g / 17.5oz boiled beef, raw
400g / 14oz of baby potatoes, cut in half
1 onion, finely chopped
2 garlic cloves, puree
2 teaspoons grated ginger
1 teaspoon turmeric
1 tablespoon cumin seeds
1 tablespoon ground coriander
1 teaspoon garam masala
1 green chili, chopped
4 cardamom pods
4 Roma tomatoes, peeled and chopped
1 cup / 240 ml passata
1.5 cups / 360 ml beef broth (or can use water)
a few handfuls of chopped spinach
salt and black pepper
1.Spray the inner pot over medium heat with oil spray
2.Add the onions and saute until soft
3.Add garlic, ginger, cumin seeds and turmeric and saute for a couple of more minutes.
4.Add coriander leaves, cloves, chilies, cardamom, garam masala and chopped tomatoes with beef and blend until well coated.
4.Add stock and passata, bring back a boil, reduce heat to low then cover and simmer for 1 hour half-hour . Check halfway through, to ascertain if you would like more stock
6.Add potatoes during the last half-hour of cooking.
7.When ready Add spinach and blend well.
8.Season as required with salt and black pepper
9.Serve with a entremots of your choice.
