Cattle Drive Casserole
This hearty casserole dish uses Bisquick and ground beef to make a meal that will satisfy everyone.
- 1/2 cup sour cream
- 1 bell pepper, diced
- 1/2 cup mayonnaise
- 3/4 cup onion, diced
- 1 sm. can (4 oz) diced green chilies
- 1 1/4 cup water, divided
- 2 cups Bisquick
- 1 taco seasoning packet
- 1 1/2 lbs ground beef
- 1 cup cheddar cheese, shredded & divided
- 1 (10 oz) can Rotel diced tomatoes with green chilies
First, preheat the oven to 350 degrees F.
Then, brown the ground beef, drain the fat. Add the diced onion, bell pepper, taco seasoning and 1/2 cup water to the pan. Simmer for about 10 minutes until the onion and pepper are softened.
In another bowl, combine sour cream, mayonnaise, 1/2 cup cheddar cheese, and green peppers, set aside.
Stir Bisquick and 3/4 cup of water (you may need a little more water) to make a soft dough. Spray a 13X9 baking dish with non-stick spray. Press the dough into the bottom of the mold and cook for 5 minutes.
On top of the cookie layer, spread the ground beef mixture, then add the can of Rotel spread over the ground beef mixture, then spread the sour cream mixture and finish with the remaining grated cheese sprinkled on top.
Bake for 30 minutes. Happy Cooking Time.
