Blueberry Oatmeal Bars


This oatmeal and blueberry bar is nice , crunchy, and delicious. The bread crust and oatmeal filling are the right complement to a juicy fruit filling.

INGREDIENT
For the bread crust
3 cups all-purpose flour
1 cup cold unsalted butter
1/2 cup sugar
1 teaspoon vanilla
1 egg yolk
Pinch of salt
For the blueberry coating
1 pint of blueberries
1/3 cup sugar
2 tablespoons all-purpose flour
1 1/2 tablespoons juice
For the oatmeal filling
1 1/2 cups all-purpose flour
1/2 cup cold unsalted butter
3/4 cup vintage oats
2 tablespoons of flaxseeds
1/2 cup sweet coconut flakes
1 teaspoon vanilla
1/3 cup sugar

INSTRUCTION
Make a bread crust
1.Combine 3 cups AP flour, 1 cup cold butter, 1/2 cup sugar , 1 teaspoon vanilla, 1 ingredient , and a pinch of salt. this may be the dough for rock bottom layer of the bars.
2.Press the dough into a greased 9 x 13-inch baking sheet. Then pierce it with a fork about 30 times.
Layer the blueberries
3..Combine 1 liter blueberries, 1/3 cup sugar , 2 tablespoons flour and 1 1/2 tablespoons juice .
Distribute the blueberries to the shortbread mixture.
Make an oatmeal filling
4.In a bowl, combine 1 1/2 cups flour, 1/2 cup cold butter, 3/4 cup ancient oatmeal, 2 tbsp. 1 tbsp flaxseed, 1/2 cup sweet coconut flakes, 1 tbsp. Vanilla and 1/3 cup sugar . Stir until the dough fits easily in your hand.
5.add the breadcrumb filling and cook
6.Press the oatmeal mixture evenly over the berries.
7.Bake at 360 degrees Fahrenheit for 40 minutes or until tops are golden brown. Let it cool before cutting the bars.
