EGGPLANT AND TOMATO SAUCE


This simple tomato and eggplant sauce is delicious, made with diced eggplant cooked with tomatoes and garlic. i prefer it served on top of pasta, but it is also great as a entremots on its own.

INGREDIENT
1 medium eggplant, dig 1/2 inch cubes
4 garlic cloves, puree and chopped
2 tablespoons of additional virgin vegetable oil
28 ounces of Italian tomatoes, juice included, i really like the Tuttorosso
fresh salt and pepper
chopped basil or parsley, for garnish

INSTRUCTIONS
1.Heat the oil over medium-high heat during a large skillet and, when hot, saute the garlic within the vegetable oil .

2.Add the eggplant and cook, about 3 minutes, until it starts to melt .

3.Roughly chop the tomatoes and increase the pan with juice.

4.Season with salt and pepper and let it simmer, uncovered, for about 15 to twenty minutes.

5.Add chopped fresh herbs and serve on top of your favorite pasta.
