Instant Pot Loaded Mashed Potatoes

These instant mashed potatoes are the last word comfort food! They're perfect for a weeknight meal or an excellent addition to a Sunday dinner.

1 1/2 cups water
5 pounds of rinsed and peeled red potatoes
2 cups hot milk or half and half for a richer potato
1 stick unsalted butter, melt
2 tablespoons soured cream
8 pieces of cooked bacon, finely chopped
2 spring onions, finely chopped (removed the ends)
3/4 cup grated cheddar
1 teaspoon garlic powder
salt and pepper to taste

1.Add water and a teaspoon of salt to the moment Pot, put during a basket or coasters and add all the peeled potatoes.

2.Cover and canopy the moment Pot. Set it to high and set the timer for 20 minutes.
After 20 minutes have passed, press Cancel and let the pressure release naturally (the valve will drop).

3.After the pressure is released, carefully remove the basket of potatoes from the moment Pot and drain the moment Pot.

4.Return the potatoes to the moment Pot or large bowl.

5.Mash the potatoes with a hand masher or hand mixer, adding a touch milk and melted butter as you mash until they reach the consistency you would like and are thick.

6.Stir in remaining ingredients, taste the seasonings and suits the salt and pepper.

7.Serve and enjoy!
