Italian Quinoa Protein Patties

This Italian-style Quinoa Protein Patties recipe makes healthy eating so easy and incredibly delicious! Each patty is under 80 calories, packed with fiber and protein, and low in carbs!


  • 4 eggs, beaten
  • 3 garlic cloves, minced
  • 2 cups of water
  • 1/2 teaspoon kosher salt
  • 1 teaspoon of olive oil
  • 3 large green onions, thinly sliced
  • 1 cup uncooked quinoa
  • 1/3 cup parmesan cheese *
  • 1 cup steamed spinach, chopped (frozen is good)
  • 1 cup plain breadcrumbs, for GF, be sure to use GF breadcrumbs


First, rinse the quinoa thoroughly and place the grains in a medium pot with 2 cups of water. Bring the water to a boil and simmer.

Then, cook until the quinoa is tender and has absorbed the liquid, about 20 minutes. Let cool.

In a large bowl, combine the cooked quinoa, eggs, Parmesan, green onions, garlic, salt, steamed spinach and breadcrumbs. Let everything sit for a few minutes to absorb the liquid. The dough should be moist, but not runny. Form 1/4 cup patties each.

Heat the oil in a large nonstick skillet over medium-low heat. In 2 or 3 batches, cook covered patties for 8 to 10 minutes per side, or until golden and golden. Happy Cooking Time.


* use vegan parmesan if you are a vegetarian
