These bars are ooey and gooey and have a delicious lemon flavor! They are topped with a brown sugar butter coconut filling and are truly AMAZING!



  • 1 egg
  • 1 stick of unsalted butter, melted
  • 1 1lb. Yellow cake mix


  • 2 tbsp. Granulated sugar
  • 1 teaspoon vanilla extract
  • ½ tsp. lemon juice (fresh)
  • 2 eggs, room temperature
  • 8 ounces cream cheese, softened
  • ¼ tsp. 1/2 tsp coconut extract
  • 1 stick of unsalted butter, melted


  • ½ tsp. sugar
  • ¾ c. Flour
  • ½ tsp. brown sugar
  • ½ tsp. sweet coconut
  • 4 tablespoons melted butter


First, preheat the oven to 350 degrees and spray a 9X13 rectangular pan with cooking spray and set aside.

Then, in a large bowl, pour the cake mix, add the egg and melted butter and mix with a wooden spoon. Once well mixed, tap the bottom of the 9X13 rectangular mold. Put aside.

In a large bowl, cream the cream cheese until smooth and add the eggs one at a time, creaming in the cream cheese after adding it to the bowl. Add the vanilla and coconut extract, lemon juice, powdered sugar and melted butter. Pour the filling over the cake mix.

For the filling: 

Stir in the brown and white sugar, sweetened coconut and stir in the butter. Add the flour to the mixture and stir. The filling will become very crumbly. Turn to wax or baking paper and let sit for about 10 to 15 minutes so the crumbs can dry a bit. Sprinkle the crumbs over the filling (I didn't use all of the crumbs for my personal taste). Bake for 35 to 40 minutes. Make sure you don't overcook as the center won't be so gooey. Let cool and cut into squares. Happy Cooking Time.
