Marinated cherry tomatoes are a colorful, juicy and flavorful side dish that's perfect for summer parties and receptions as they can be made ahead! Let the tomatoes marinate for at least 2 to 4 hours. They are even better overnight.


  • 1 lemon juice
  • 1/4 red onion, thinly sliced
  • 1/2 pound ripe cherry tomatoes, cut into wedges
  • sea salt to taste
  • 1 tablespoon of red wine vinegar
  • 1/4 cup quality extra virgin olive oil
  • 1 / 2-1 garlic clove, crushed and chopped into a paste
  • freshly ground black pepper to taste
  • fresh basil optional


First, cut your cherry tomatoes into quarters and cut the onion into thin strips.

Then, using the flat side of your knife, crush the peeled garlic and chop it into a paste. Season with a pinch of salt and add to a bowl with your vegetables.

Add olive oil, vinegar, lemon juice, freshly cracked black pepper, and fresh basil if you have it on hand! Toss to coat the tomatoes and let stand at room temperature for 1 to 2 hours, stirring occasionally. Enjoy at room temperature and feel free to adjust the salt and pepper to taste.

These pickled tomatoes are absolutely fantastic as a summer salad garnish that doubles as a dressing! Serve it with leafy greens, homemade croutons and all your favorite mixes. It is also amazing on grilled crostini as an aperitif and goes very well with avocado toast! The possibilities are limitless. Happy Cooking Time.
