Mediterranean Tuna Salad


Mediterranean Tuna Salad


Healthy tuna fish salad recipe without mayonnaise, made Mediterranean style with many crunchy vegetables, fresh herbs and tangy Dijon vinaigrette!

INGREDIENT
2 1/2 teaspoons good quality Dijon mustard
Lime spirit
1 1/2 limes, juice
1/3 cup Early Harvest extra virgin vegetable oil
1/2 teaspoon sumac
A pinch of salt and pepper
1/2 teaspoon ground red chili flakes
For the tuna fish salad
3 cans of tuna, 5 ounces each (use the standard tuna of your choice)
2 1/2 celery sticks, chopped
1/2 English cucumber, chopped
4–5 small whole radishes, stems removed, chopped
3 green onions, white and green, chopped
1/2 medium purple onion , finely chopped
1/2 cup chopped Kalamata olives, halved
1 bunch parsley, stems removed, chopped (about 1 cup chopped fresh parsley)
10-15 fresh mint leaves, finely chopped
Six heirloom tomatoes for serving
Homemade ribbon chips or ribbon pouches to serve

INSTRUCTIONS
1.To make a tangy mustard vinaigrette sauce, during a small bowl, beat the Dijon mustard, lime zest and juice . Add vegetable oil , sumac, salt and pepper and crushed pepper flakes (if using), and beat again until smooth. put aside for a flash .
2.To make tuna fish salad , during a large bowl, combine the tuna with chopped vegetables, Kalamata olives, fresh parsley and chopped mint leaves. Stir gently with a wooden spoon.
3.Pour the vinaigrette over the tuna fish salad . Stir again to make sure that the tuna fish salad is evenly coated within the dressing. chill for half an hour before serving. When able to serve, stir the salad gently to refresh it.
4.Serve during a pita bag for a sandwich dinner. Or to function an appetizer, transfer to a serving plate and add the heirloom pita chips and tomato wedge on the side. If desired, serve a serving of tuna fish salad over the heirloom tomato slices. Enjoy!
