Oatmeal Fudge Bars
These bars are simply AMAZING! The warm oat layer combined with the chewy center and the wonderful butterscotch flavor give these bars a really special taste! Perfect for any occasion!
- 2 whole eggs
- 1 tsp salt
- 2 tsp vanilla extract
- 3 cups old fashion oats
- 1 cup butter, , softened
- 2 cups brown sugar
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 2 Tbls butter
- 1 tsp vanilla extract
- 1 (12 oz) package semi-sweet chocolate chips
- 1 (14 oz) can sweetened condensed milk
First, preheat the oven to 350 degrees. Grease or line a 13 x 9-inch baking dish with parchment paper. Put aside.
Then, in an electric stand mixer, beat butter and brown sugar until light and fluffy. Stir in the eggs and vanilla. Stir in the oats, flour, baking soda and salt until well combined.
Press 2/3 of the mixture into the bottom of the prepared baking dish.
In a microwave-safe bowl, melt the chocolate chips, sweetened condensed milk, butter and salt. Heat 1 minute, stir until smooth. Heat at 15 second intervals if it needs more.
Stir in the vanilla. Stir until well combined. Pour over the base mixture, distribute evenly.
Crumble the rest of the base mixture over the fudge layer.
Bake for 25 to 30 minutes until the dough is set and begins to brown.
Remove from oven and let cool completely before serving.
