 orzo summer salad


Orzo Summer Salad! With chicken and orzo, crammed with fresh vegetables, and topped with lemon vinaigrette and chevre .

INGREDIENT
For the salad:
1 cup raw orzo
1 to 2 cups grilled chicken, grated or dig small pieces
1 to 2 cups of chopped cucumber
1 to 2 cups of baby spinach
1 to 2 cups fresh sweet corn (3 to 4 cobs), chop the cobs
2 garlic cloves, chopped
Crushed chevre (optional)
for vinaigrette:
olive oil
lemon juice
a small bunch of fresh fennel, chopped
small bunch of spring onions, sliced
salt and pepper

INSTRUCTIONS
1.Cook the orzo consistent with package directions.
2.Heat a touch vegetable oil during a large skillet over medium heat. Add garlic and corn; saute until the corn is bright yellow and tender.
3.Mix all the ingredients, including anise, scallion and vegetable oil , juice , chevre , and salt and pepper to taste. Serve hot or cold. YUMMYYYYYY.
