Rainbow Vegetarian Pad thai

The best part about this recipe is that you can throw any veg you want here. The more colors, the better in my opinion. It's just a prettier bowl, wouldn't you agree? So go ahead and eat the rainbow.


for the pad thai

  • 1 red pepper
  • 2 carrots
  • 1 egg, beaten
  • half a yellow onion
  • 1/2 cup peanuts, chopped
  • 2 tablespoons of oil
  • 4 ounces of brown rice noodles (you can get stir-fry-type noodles or Pad Thai noodles - and usually it's half a box)
  • 1 courgette
  • 1/2 cup fresh herbs such as cilantro, green onions and basil, chopped

For the sauce:

  • 1 tablespoon of soy sauce
  • 3 tablespoons of brown sugar (or under another sweetener)
  • 2 tablespoons of white vinegar
  • 3 tablespoons of chicken or vegetable broth
  • 3 tablespoons fish sauce or vegan fish sauce substitute
  • 1 teaspoon of chili paste (sambal oelek)


First, place the uncooked noodles in a bowl of cold water to soak them. Spiral zucchini, red pepper and onion into a noodle shape. Cut the carrots into very small pieces (or spiral them if they're big enough).

Then, shake the ingredients for the sauce in a pot.

Heat a tablespoon of oil over medium-high heat. Add vegetables - sauté with tongs for 2-3 minutes or until tender and crisp (if they are not spiraling, they may need more time). Be careful not to overcook them - they will get soggy and heavy. Transfer to a dish and set aside.

Add another tablespoon of oil to the pan. Drain the noodles - they should be soft by now. Add the noodles to the hot pan and sauté for one minute using tongs to mix. Add the sauce and sauté for another minute or two, until the sauce begins to thicken and stick to the noodles. Push the noodles aside to make some room for the egg - pour the beaten egg into the pot and let it sit for about 30 seconds. Mix everything with the tongs. The egg mixture will stick to the noodles and everything will start to get sticky.

Add the vegetables, mix and remove from the heat. Stir in the peanuts and herbs and serve immediately.
