Spice Rubbed Salmon with Mango Salsa
Spiced Salmon with Mango Avocado Salsa! An easy and impressive dinner with a delicious smoky-sweet flavor and a touch of zesty house salsa to take it over. The best weekday dinner.
INGREDIENTS
SMOKED SALMON WITH SPICES
- 1/2 teaspoon allspice
- 1 teaspoon of chili powder
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon cayenne pepper
- 4 wild salmon fillets
- 1 teaspoon of ground cumin
- Kosher salt and fresh ground black pepper to taste
MANGO SAUCE
- 1/3 cup diced red onion
- 1/4 teaspoon chili powder
- Juice of half a lime
- 2 cups diced mango
- 1 tablespoon of chopped cilantro
- Kosher salt to taste
- 2 cups of cooked quinoa
- 1 cup canned black beans, rinsed and drained
INSTRUCTIONS
SMOKED SALMON WITH SPICES
First, in a small bowl, whisk together all the spices for the salmon fillets. Distribute the spice mixture evenly between the salmon and rub the fish.
Then, place the fillets on a grill that has been heated over medium-high heat and the grates have been oiled. Grill for about 4 to 6 minutes or until salmon flakes with a fork.
MANGO SAUCE
In a medium bowl, combine all the mango salsa ingredients until well blended.
MOUNTING
In 4 bowls, place 1/2 cup cooked quinoa, 1/4 cup black beans, 1 salmon fillet and a little mango salsa. Happy Cooking Time.
NOTES
If you don't have a grill, you can also grill the salmon in the oven or fry it in a pan.
