Vegan Chorizo and Vegetable Paella


vegan Spanish chorizo and vegetable paella! Wrapped in yellow peppers, peas, lemon and chorizo-style vegan sausage. Fresh, colorful and healthy vegan chorizo and vegetable paella! This Spanish classic may be a unique dish and really delights the crowds!

INGREDIENT
1/2 teaspoon of turmeric
600 ml of vegetable broth
6 vegan chorizo style sausages
1 onion
4 cloves garlic
1 yellow (or red / orange) bell pepper
6 cherry tomatoes
1 tablespoon tomato puree
2 teaspoons smoked paprika
200g of bomba paella rice
1 cup frozen peas
1 lemon
A handful of fresh parsley
Mediavine

INSTRUCTIONS
1.In a large pyrrex bowl / bowl, add the recent vegetable stock and turmeric and let it infuse.
Heat a tablespoon of oil during a paella / large skillet over medium heat. Cut the chroizo sausage into small pieces and fry for about 5 minutes until all sides start to brown.
2.Transfer the chorizo chunks to a bowl and put aside for later.
3.Pour a touch more oil into the pan and add the finely chopped onions, saute for a couple of minutes then add the crushed garlic and chopped pepper.
4.After a couple of minutes, add the cherry tomato chunks, tomato puree and smoked paprika, stir and cook for a couple of minutes.
5.Then add the bomba paella rice. Stir and once the rice is obvious round the edges, add the turmeric infused stock.
6.Simmer for 10 minutes without stirring. Stir once and let stand another 10 minutes.
7.Add frozen peas and chorizo, stir.
8.Taste and confirm that the rice is cooked, there should still be a touch bite but the surface is soft. 9.Season with salt and pepper.
10.Squeeze the juice from half a lemon and use the opposite half to garnish.
11.Add chopped parsley and serve! it's best to eat them fresh, but are going to be stored within the refrigerator in an airtight container for 2-3 days.
