Cheesy Zucchini Tater Tots Recipe

With the end of summer comes an abundance of fresh zucchini. Try this cheesy zucchini recipe and those zucchini will be gone in no time! Cheese, zucchini and fried potatoes in homemade tater tots.


  • 2 eggs
  • 1/4 teaspoon pepper
  • 1/4 cup regular breadcrumbs
  • 1 teaspoon of salt optional
  • 3/4 teaspoon garlic powder
  • 1 medium zucchini
  • 1/4 cup panko breadcrumbs
  • 1 cup grated cheddar cheese
  • Marinara


First, preheat oven to 400. Line a baking sheet with parchment paper or spray with cooking spray.

Then, grate the zucchini in a clean tea towel. Wrap the towel and remove as much liquid as possible.

In a large bowl, combine zucchini, eggs, panko, breadcrumbs, salt, pepper, garlic powder and cheese.

Pour round spoonfuls onto prepared baking sheet. Bake for 20 to 25 minutes or until golden brown. Serve hot with marinara sauce for dipping. Happy Cooking Time.
