CHETTINAD FISH FRY
The fish is marinated in chettinad seasoning and fried to the letter.
4 shallots, roughly chopped
4 cloves garlic
½ teaspoon cumin seeds
½ teaspoon of fennel seeds
½ teaspoon whole black pepper
½ teaspoon powdered turmeric
1 ½ teaspoon ground coriander
2 teaspoons of fresh powder
200g (about 5 pieces) fish, dig medium sized pieces
Tomato and onion salad to serve (optional)
Rice, for serving
1.Place shallots, garlic, cumin seeds, fennel seeds, black pepper, turmeric powder, ground coriander, fresh powder and salt during a small kitchen appliance bowl. Process until it forms a paste. Add a touch water if necessary.
2.Place the cleaned fish pieces during a bowl. Rub with marinade. Soak for half-hour within the refrigerator.
3.Meanwhile, heat the oil during a skillet over medium-high heat. Place the fish chunks within the skillet. Fry until cooked. Serve with rice and tomato and onion salad.
