Chinese Braised Chicken with / Mushrooms is a flavorful, umami dish –– perfect with a side of rice and a sautéed green vegetable.
- 1 tablespoon of butter
- 2 teaspoons of soy sauce
- 1 tablespoon of olive oil
- ½ teaspoon of dried thyme leaves
- 2 pounds of chicken thighs with bone and skin
- ⅔ cup of chicken broth
- 1 pound mushrooms, sliced 1/2 "thick
- ½ cup of optional white wine
- ½ teaspoon of salt and seasoned pepper to taste
- 4 garlic cloves, minced
- ½ teaspoon of lightly crushed dried rosemary
First, preheat the oven to 425 ° F.
Then, season the chicken with salt and pepper. Put aside.
Heat the butter and oil in a 10 "skillet over high heat. Add the chicken (skin side down) and brown without moving the chicken, about 4 to 5 minutes. Remove from the pan and set aside.
Quickly mix the mushrooms with the soy sauce. Cook mushrooms, garlic, thyme and rosemary until mushrooms are tender, about 5 minutes.
Add the chicken broth and white wine. Simmer for 2 minutes.
Place the seasoned chicken, skin side up, on the mushrooms.
Bake for 35 to 40 minutes or until the chicken reaches 165 ° F. Broil for 1 minute if desired.
Pour the mushroom sauce over the chicken. Garnish with parsley and serve. Happy Cooking Time.
Do not add soy sauce to the mushrooms in advance, it will remove too much moisture on the mushrooms.
