Chinese Braised Chicken with / Mushrooms is a flavorful, umami dish –– perfect with a side of rice and a sautéed green vegetable.


  • 1 tablespoon of butter
  • 2 teaspoons of soy sauce
  • 1 tablespoon of olive oil
  • ½ teaspoon of dried thyme leaves
  • 2 pounds of chicken thighs with bone and skin
  • ⅔ cup of chicken broth
  • 1 pound mushrooms, sliced 1/2 "thick
  • ½ cup of optional white wine
  • ½ teaspoon of salt and seasoned pepper to taste
  • 4 garlic cloves, minced
  • ½ teaspoon of lightly crushed dried rosemary


First, preheat the oven to 425 ° F.

Then, season the chicken with salt and pepper. Put aside.

Heat the butter and oil in a 10 "skillet over high heat. Add the chicken (skin side down) and brown without moving the chicken, about 4 to 5 minutes. Remove from the pan and set aside.

Quickly mix the mushrooms with the soy sauce. Cook mushrooms, garlic, thyme and rosemary until mushrooms are tender, about 5 minutes.

Add the chicken broth and white wine. Simmer for 2 minutes.

Place the seasoned chicken, skin side up, on the mushrooms.

Bake for 35 to 40 minutes or until the chicken reaches 165 ° F. Broil for 1 minute if desired.

Recipe Notes

Do not add soy sauce to the mushrooms in advance, it will remove too much moisture on the mushrooms.
