Chocolate Almond Cookies

Chocolate Almond Cookies

Delicious chocolate and almond cookies made without paleo and gluten free with a handful of simple and healthy ingredients.


  • 2 eggs
  • 1 cup of sugar
  • 2 teaspoons of vanilla
  • 1 cup of butter
  • 3/4 cup firmly packed brown sugar
  • 1 teaspoon of salt
  • 2 teaspoons of baking soda
  • 1/2 cup chopped almonds
  • 1/2 cup of chocolate chips
  • 1 and 3/4 cup all-purpose flour
  • 1 cup and 1/4 of cocoa powder I prefer to make a mixture of regular and dark cocoa powder
  • 1 5 oz bag of Brach Almond Supremes, chopped


First, preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.

Then, in the bowl of an electric mixer, beat the butter until light and creamy. Add sugar and brown sugar and beat until well combined. Add the eggs, one at a time, mixing until each is completely incorporated into the batter. Add the vanilla and mix.

In another bowl, combine the flours, cocoa powder, baking soda and salt. Slowly add the dry mixture to the wet mixture, mixing until just combined. Stir in chocolate chips, almonds and Brach's almond segments.

Using a large cookie spoon, place cookie dough on a baking sheet. A large cookie spoon contains about 3 tablespoons of cookie dough. Space the dough at least 2 "apart.

Bake for about 10 to 12 minutes. The cookies should start to firm up but still soft in the middle. 
Remove from oven and let cool in a saucepan on a wire rack for at least five minutes. Repeat with the rest of the dough. Let cool completely before storing. store in a tightly closed case. Happy Cooking Time.
