This year, I opted for these cute little Christmas pudding truffles. A very simple recipe - take a fruit cake and mix it with dark chocolate and a hint of brandy.

  • 50 g icing sugar
  • 25 g of cocoa powder
  • 100g cake crumbs more or less any sponge cake works, even a stale cake
  • 1 tablespoon of milk
  • 1 teaspoon of aroma I love the aroma of rum or orange extract
  • 3 tsp icing sugar mixed with 1 tsp boiled water to make ice cream
  • holly made from a small amount of colored sugar paste. You can also use frozen cherries and angelica or holly nuggets.

First, combine the cake crumbs, icing sugar and cocoa powder.

Then, add the aroma and milk. Mix until the ingredients are well combined and stick together.

Using your hands, boil the mixture until it is almost evenly colored. Wash your hands. The next step is easier with clean hands.

Pinch off a small piece of truffle mixture the size of a sprout. Roll into a ball and set aside.

Pour a small amount of frosting on top of the pudding, then garnish with the melted holly. Cool for an hour to let set. Happy Cooking Time.
