CINNAMON PECAN PUFFS










Cinnamon Pecan Puffs are chewy, chewy, nutty cookies made with a short list of ingredients. A longtime favorite!

Ingredients

  • 1/8 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • 1 1/2 tsp. Extra fine powdered sugar *
  • 1/3 cup pure icing sugar *
  • 110g butter at room temperature, cool (4 oz)
  • 110 g shelled pecans (4 oz)
  • 150 g 5 1/4 oz gluten-free all-purpose flour


Instructions

First, preheat your oven to 150 degrees C (300F).

Then, line a baking sheet with non-stick parchment paper.

Add the pecans in a food processor and reduce to a coarse powder.

Add the butter, salt, sugar and vanilla extract and beat a few times to mix briefly.

Add the flour to the food processor.

Process the ingredients until they come together. You should not overwork the dough.

Turn on plastic wrap.

Gather the dough and form a disc. Refrigerate for about 30 minutes or until the dough is firm.

Take about a teaspoon of the mixture and roll into balls about 2 ½ cm / 1 ”in diameter. It may be helpful to use slightly damp hands. Place the balls on the prepared baking sheet, leaving a space between each. They spread a bit.

Bake for about 25-30 minutes until edges are lightly golden.

Remove from oven and let cookies cool slightly on the baking sheet for about 3 minutes. Leave the oven on.

Sift the icing / pastry sugar onto a plate. Roll the puffs in the sugar then return them to the baking sheet.

Return the baking sheet to the oven for 2-3 minutes to put the icing sugar / pastry.

Let the Puffs cool for 5 minutes before removing them carefully * on a wire rack to cool them completely.

store in a tightly closed case.

To serve, sprinkle with a little more icing / pastry sugar.

Notes

* Australian tablespoon is 20ml or 4 teaspoons. In most other countries, the tablespoon is 15 ml or 3 teaspoons. 

* Pure icing sugar is naturally gluten free. The icing sugar / confectionery mixture usually contains cornstarch. Make sure the cornstarch is made from corn, not wheat. 

* Pecan Puffs are very fragile and should be handled with great care.
