Classic Coconut Macaroons


Classic Coconut Macaroons

Classic Coconut Macarons are the BEST combo of sweet chocolate and chewy coconut cookies, made with almond and vanilla flavors, ready in under 30 minutes!


  • 1/2 cup of sugar
  • 1/2 teaspoon almond extract optional
  • 4 large egg whites, room temperature
  • 1 1/2 tsp. 1 tsp vanilla extract
  • 1/2 cup melted chocolate (dark or milk)
  • 1 14 oz. packet of grated coconut, sweetened


First, preheat the oven to 325 degrees and line the cookie sheets with parchment paper.

Then, in a large bowl, use the whisk of a stand mixer or hand mixer and beat the egg whites, sugar, vanilla and almond extract until thickened and foamy. (See the photo and read my tip on how to get eggs to room temperature in 30 seconds.)

Add the grated coconut and fold until blended.

Spread golf-ball-sized mounds and place them on cookie sheets 3 inches apart. Bake for about 20-25 minutes or until starting to brown.

Let cool 10 minutes on cookie sheets, then pass to cooling racks. Once completely cooled, dip it in melted chocolate and place it on baking paper to set. Happy Cooking Time.

Recipe Notes

For the melted chocolate, you can use chocolate chips with a little oil to melt smooth, baked chocolate, or I always use melted chocolate!
