 Coconut Lime Tarts

Coconut Lime Tart a light-weight , soft and refreshing lime filling with a soft coconut milk topping! Dairy free easily.


12 finished pie crusts, bake consistent with directions and cooled

Fill lime cream:

3 large eggs

3/4 cup sugar

1/2 cup fresh or bottled juice

Grated 1 or 2 limes i exploit 1.5 tablespoons of lime peel

4 tbsp. Unsweetened butter, dig cubes

3/4 cup whipped coconut milk


1/4 cup roasted coconut

Grated lime peel

1 1/2 cups whipped coconut milk


1.Prepare the lime cream filling: during a small saucepan, beat the eggs, sugar, juice and grated skin until smooth. Place over medium heat * and cook, stirring constantly, until thickened (4-5 minutes)..Remove from heat and stir in butter until melted. Cool to temperature

2.When the curd has cooled to temperature , gently add the whipped coconut milk .

3.Pour the recent filling into the cooled pie shells and place within the refrigerator to harden completely.

4.Distribute the remaining coconut milk on the tart and garnish with roasted coconut and lime zest. Store within the refrigerator until able to serve.
