CREME EGG CHOCOLATE LOAF CAKE

CREME EGG CHOCOLATE LOAF CAKE

An easy creamy egg cake with chocolate sponge, creamy egg themed buttercream, and creamy eggs! Easter Paradise!

INGREDIENTS

For the cake:

  • 3 large eggs
  • 4tbsp cocoa powder
  • 50g dark brown sugar
  • 125g light brown sugar
  • 75 ml milk
  • 175g self-rising flour
  • ½ teaspoon of baking powder
  • pinch of salt
  • 1 tablespoon of Greek yogurt
  • 175g unsalted butter, very soft
  • 1 tablespoon of vanilla bean paste or extract
  • 100g of milk chocolate pieces

For the icing:

  • 2 tbsp unsalted butter
  • 3 tablespoons of sour cream
  • 100g dark chocolate

Decorate:

  • Full or mini creamed eggs

INSTRUCTIONS

For the cake:

First, preheat your oven to 160 ° C / gas 3 and prepare a large (2 lb) loaf pan, lining it with parchment paper or a paper liner.

Then, in a large bowl, cream together your butter and sugar then add your three eggs, one at a time. Add the vanilla and salt and mix.

Then sift the self-rising flour and cocoa powder to remove lumps, and finally add the chocolate pieces. Pour the batter into your loaf pan, then bake for 45 minutes (check after 40 minutes but it may take a few more minutes). It's done when a skewer inserted in the middle comes out clean (unless you hit a pocket of melted chocolate of course, but it will look like melted chocolate, not cake batter!).

For the icing:

In a saucepan over low heat, heat the double cream jar and add the two Mars bars cut into pieces. Let the chocolate melt, stirring gently all the time. Once the frosting has cooled slightly and thickened, pour it on top of your cake and top with more mars bars or chopped chocolate pieces. Happy Cooking Time.
