Herbal Chicken Soup

1 Cornish chicken
▢0.7 ounce astragalus root
▢0.7 ounce dried Chinese sweet potato
▢0.4 ounce angelica sinensis
▢0.3 ounces of goji berries
▢4-8 red dates
▢2 1/2 cups of fresh coconut milk
▢1 1/2 cups of water
▢1 1/2 teaspoon salt
▢2 inches of ginger
▢5 large garlic cloves, peeled
▢purple onion , thinly sliced
1.Rinse all herbs under running water to get rid of dirt. Soak in water for 5-10 minutes, then drain and put aside .
2.Scrub the Cornish chicken with many salt and rinse under running water to wash it. otherwise you can steam them in boiling water for 1 to 2 minutes.
3.In a clean saucepan, add the Cornish chicken, ginger, garlic, coconut juice and water. bring back a boil and take away any existing foam. Reduce heat and convey to a boil and add all herbal remedies and 1 1/2 teaspoons salt (or to taste).
4.Simmer for 40 to 45 minutes, or until soup is robust enough and chicken is tender.
5.Serve hot and garnish with chopped green onions.
