Jamaican Banana Fritters
These delicious treats can be eaten morning, noon or evening, as a snack or as a dessert. These donuts are so easy to prepare and will satisfy your every craving.
- 1 teaspoon of vanilla
- 1/4 teaspoon of cinnamon
- 1/3 cup coconut sugar
- 1/4 cup coconut oil
- 1 1/2 cup gluten free flour
- 3 large overripe bananas or 5 medium bananas
- 1/4 teaspoon nutmeg
- 1/4 teaspoon pink Himalayan salt
First, peel each of the bananas, slice them and add them to a bowl.
Then, use a potato masher or blender to break down the bananas until they become a pureed consistency.
Then add the spices, gluten-free flour, pink salt, vanilla and coconut sugar
Mix to a smooth consistency with a whisk
Melt 1/4 cup of coconut oil in a nonstick skillet over medium heat.
Pour some of the batter into the pan and fill the pan with spoons of batter (do not overload)
Cook each side until golden brown and flip and cook the other side.
Repeat with the rest of the dough, add more oil if necessary

Overripe bananas. Ideally, you want to use overripe bananas for this recipe. Bananas whose skin is blacker than yellow. This is because overripe bananas are naturally sweet, which reduces the risk of having to add too much sweetener.
Mash the bananas. Use a potato masher or blender to break down the bananas into a more mashed consistency. This will form the basis of the banana donut batter.
Use of oil. To use as little oil as possible, use a heavy-duty non-stick pan.
As the dough bakes, it will spread out slightly before turning golden. Use an egg lifter to flip the donut to the other side and repeat.
