Meatloaf With Mushroom Gravy

It really is the best meatloaf with mushroom sauce. Soft and explosive in flavor. Mushroom sauce puts it on top. And you won't believe the meatloaf sandwiches the next day! So good!


  • 1 large egg
  • 1 large onion, finely chopped
  • 1/2 cup grated Parmesan
  • 1 1/2 pound lean ground beef
  • 3 garlic cloves, minced
  • 1 pkg. (1 oz.) Dry juice or brown gravy mix
  • 1/2 cup seasoned breadcrumbs
  • 1 tablespoon of Worcestershire sauce
  • 1/2 cup mushrooms, finely chopped
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 2 tablespoons of extra virgin olive oil


  • 3 tbsp unsalted butter
  • 1 teaspoon of dried thyme
  • 3 tablespoons all-purpose flour
  • 2 cups mushrooms, thinly sliced
  • fresh thyme, garnish
  • 2 cups of beef broth
  • 1 teaspoon of balsamic vinegar
  • mashed potatoes, garnish
  • kosher salt and freshly ground pepper, to taste


First, preheat the oven to 350 ° F and lightly grease a 9 x 5 inch loaf pan.

Then, heat olive oil in a large skillet or skillet over medium-high heat and sauté the onion and 1/2 cup of the mushrooms for 6 to 8 minutes, or until softened, then remove from fire.

In a large bowl, combine ground beef with cream of mushroom soup, dry mushroom sauce mix, Parmesan and seasoned breadcrumbs. Add the sautéed vegetables and season generously with salt and pepper, then add the egg and Worcestershire sauce and mix everything together with your hands or two forks. Don't mix too much.

Transfer the mixture to a greased loaf pan and bake for 40 minutes or until cooked through.

While the meatloaf is cooking, prepare the mushroom sauce: melt the butter in a large saucepan or skillet and sauté 2 cups of mushrooms until softened. Add the minced garlic and cook for 2 minutes.

Sprinkle flour and thyme over mushrooms and cook, stirring frequently, until flour has a chance to cook. Stir in the beef broth and balsamic vinegar and bring to a boil, then lower the heat to a boil and cook until the mixture thickens and reduces. 10 to 15 minutes. Season with salt and pepper.

Remove the meatloaf from the oven and pour the sauce on top. Return to the oven and cook for another 10 minutes.

Let the bread rest in the pan for 15 minutes before serving. Happy Cooking Time.
