Mini Lasagna Cups are the perfect addition to your party appetizer, or even just an easy new way to make lasagna for dinner! So delicious and so much fun!

  • 1 1/2 cup ricotta cheese
  • 24 2-inch won-ton wraps
  • 1 1/2 cups grated mozzarella cheese
  • 1 cup marinara sauce, house or store-bought
  • 2 tablespoons chopped fresh parsley leaves
  • 1 tablespoon of olive oil
  • 2 Italian sausage links, shell removed
  • Kosher salt and freshly ground black pepper, to taste

First, preheat oven to 375 degrees F. Lightly oil a standard 12-cup muffin pan or coat with nonstick spray.

Then, heat olive oil in a large pot or casserole dish over medium heat. Add the Italian sausage and cook until golden brown, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain off excess fat and stir in marinara sauce.

Season the ricotta cheese with S&P to taste; put aside.

Place the wonton wraps in each of the 12 muffin cups, pressing down carefully to make sure there is an opening in the center. Fill each cup with 1 tablespoon of ricotta cheese. Top with 1 tbsp of marinara mixture and 1 tbsp of mozzarella cheese; repeat with another layer.

Place in the oven and bake for 10 to 12 minutes, or until the cheese is melted and the wonton wraps are golden brown.

Serve immediately, garnished with parsley, if desired. Happy Cooking Time.
