Red Pepper and Baked Egg Galettes

Baked egg patties with roasted red peppers and onions. The peppers and onions are roasted and then cooked on a puff pastry with an egg in the center. These patties are perfect for breakfast, brunch or dinner!


  • 1 teaspoon of cumin
  • 6 tablespoons of olive oil
  • 1 teaspoon of coriander
  • 1 sheet of puff pastry, thawed
  • fresh sprigs of thyme leaves removed
  • 1 beaten egg, to brush the dough
  • 12 teaspoons of sour cream
  • a handful of chopped fresh parsley
  • 4 large fresh eggs
  • salt and fresh cracked pepper
  • 2 large or 4 small red bell peppers cut into 1/2-inch strips
  • 2 small onions (red or white) cut in half and cut into 1/2-inch wedges
  • handful of chopped cilantro


First, set the oven to 400F

Then, combine the peppers, onions, thyme and spices in a bowl. Add olive oil and mix well so that everything is coated with oil and spices.

Spread out on a baking sheet and roast for about 30 minutes, stirring and rearranging the vegetables several times so they don't burn.

Sprinkle the vegetables with half the fresh herbs and set aside.

Turn the oven to 425. Roll out the dough on a floured surface until it reaches a 12 x 12 inch square. 
Cut into four 6-inch squares. Transfer to two baking sheets lined with parchment or silpat paper.

Take a knife and mark a small 1/4 inch frame around each square of dough. Do not cut completely. 
Prick the inside of the squares all over with the tines of a fork. Return to refrigerator for 30 minutes.
Remove the dough from the refrigerator and brush all over with a beaten egg. Spread the inside of each square with 3 teaspoons of sour cream.

Top each with a little of the veggie mixture, spread it evenly, leaving the borders free and leaving a shallow depression in the center for the egg, which will enter later.

Bake for about 10 minutes until the dough rises and begins to brown.

Remove and gently break the egg in the center of each patty.

Return to the oven for about 10 minutes until the egg is set.

Sprinkle with salt, pepper and remaining herbs. Drizzle with a little olive oil and eat right away.
