Slow Cooker Fiesta Chicken Soup
This Slow Cooker Fiesta Chicken Soup is simple and delicious! We love how healthy chicken soups allow us to enjoy a variety of nutritious foods while tasting decadent and rich.
Ingredients
- 3 garlic cloves, minced
- 4 cups of chicken broth
- 4 cups grated cooked chicken (about 3 chicken breasts)
- 1 tablespoon of vegetable oil
- 1 cup of instant rice
- 1/4 teaspoon ground cumin
- 1/2 cup salsa in pieces
- 1 can (15 ounces) black beans, drained and rinsed
- 1 teaspoon of seasoned salt
- 1 small onion, chopped
- 1 can (11 ounces) whole kernel corn with red and green peppers, drained (I used Green Giant Mexicorn)
Instructions
In a large saucepan, heat vegetable oil over medium heat. Add the onions and cook until translucent - about 5 minutes. Add the garlic and cook, stirring frequently, for about 1 minute - being careful not to burn it. Add the chicken broth and bring to a boil. Add the chicken, black beans, corn, salsa, rice, seasoned salt and cumin. Stir to combine. Reduce heat to low and cook for 5 to 10 minutes or until the rice is tender. Happy Cooking Time.
