Vegan Carrot Cake Bites






These healthy carrot cake bites remind you of a gourmet slice of cake, but are actually good for you! They are vegan, no-bake and really delicious!

INGREDIENTS

  • 1/2 teaspoon of salt
  • 1/2 cup pure maple syrup
  • 2 cups old fashioned oats
  • 2 cups unsweetened flaked coconut
  • 1/2 teaspoon of vanilla
  • 1/2 cup almond butter
  • 1 medium carrot, peeled and chopped
  • 1 teaspoon of cinnamon (more or less to taste)
  • white chocolate chips (optional)

INSTRUCTIONS

First, add the carrot pieces to the bowl of a food processor and beat until finely chopped. (You should have a generous 1/2 cup.)

Then, remove the carrots and set aside. Add the oats and coconut. Mix until the mixture is coarsely ground.

Add all the other ingredients, including the chopped carrots. Mix until a smooth, sticky "paste" forms. (You may have to push it a few times with a spatula to help it.)

Add the white chocolate chips and beat until chopped.

Roll into balls. Store in the refrigerator or freezer. Mwah! This week is looking good. Happy Cooking Time.
