Veggie Peanut Soba Noodle Bowl
Vegetarian Peanut Soba Noodle Bowl Features red peppers, cabbage, chicken, soba noodles and a quick homemade spicy peanut sauce. Salads don't taste much more delicious than that.
Ingredients
- 2 carrots
- 1 cup of broccoli
- 1 bell pepper
- 4 oz mushrooms
- sesame seeds optional
- 2/3 cup edamame or frozen peas
- 4 oz soba noodles
- optional sriracha
- green onions optional
Peanut sauce
- 1 lime
- 1 tablespoon of maple syrup
- 1 tablespoon of soy sauce
- 1 clove of garlic
- 2 tablespoons of natural peanut butter
- 1 inch of ginger root
Instructions
First, bring water to a boil in a medium saucepan.
Then, cook the soba noodles according to package directions (about 3 minutes) adding the frozen edamame to cook them along with the noodles.
Drain the noodles / edamame and rinse with cold water.
In a frying pan or wok, heat a few tablespoons of water.
Slice your vegetables and sauté for 5 to 8 minutes or until desired doneness. If they start to stick, add a few more tablespoons of water.
In a small bowl, whisk together the peanut butter, maple syrup, soy sauce, lime juice, minced or pressed garlic, grated ginger. Add more than 2 tablespoons of water to dilute the mixture to the desired consistency. Should make about 1/2 cup of the sauce.
Divide the noodles between 2 bowls, add 1/2 vegetables to each bowl, garnish with sauce. Garnish with a sriracha fillet, chopped green onions and sesame seeds. Happy Cooking Time.
