Baked Eggs En Cocotte
I recently came across a recipe for this casserole baked egg dish and I'm so glad I did. I don't usually eat eggs, but when I do, I usually like them poached with toast and butter. This recipe is now at the top of my favorites list.
Ingredients
- Salt / pepper to taste
- 2 strips of bacon, cooked and chopped
- Splashes of cream can be replaced with milk
- 4 eggs
- 1/4 cup grated Gruyère cheese that you can substitute for any hard cheese
- 2 sprigs of thyme for garnish
- Non-stick spray
Instructions
First, preheat the oven to 375 degrees Fahrenheit
Then, spray non-stick spray in 2 ovenproof ramekins, fill the bottom with pieces of cooked bacon and cheese
Break 2 eggs into each ramekin, making sure not to break the yolk
Garnish each dish with a hint of cream, salt and pepper
Cook the ramekins in a larger saucepan filled with 1 inch of boiling water
Bake 12 to 15 minutes for the runny yolks
-18 minutes for soft yolks
-20 minutes for hard yolks
Garnish with thyme springs and serve immediately
