Chicken Satay Curry
With our slimming version of a delicious chicken satay curry, who needs the take out? Perfect if you're counting calories or following a plan like Weight Watchers.
Ingredients
- 5 button mushrooms, sliced
- 1 onion, diced
- 400 ml (13.5 fl oz.) Coconut cream
- 500 g (17.5 oz) chicken thigh, cut into large cubes
- 2 tablespoons of crunchy peanut butter
- 1 teaspoon of crushed garlic
- 1 tablespoon of vegetable oil
- 2 tablespoons of red curry paste
Instructions
First, heat the oil in a frying pan over medium heat.
Then, add the onion, garlic and mushrooms. Cook until the onion becomes translucent. About 3 minutes.
Now add the chicken thigh and cook until golden brown.
Then add the curry paste and cook until aromatic. About 2-3 minutes.
Add coconut cream and peanut butter and mix well.
Simmer, uncovered, for about 15 minutes or until the sauce has reduced and thickened.
Serve and enjoy.
