Easy Baked Alaska

This Easy Baked Alaska combines homemade brownies with your favorite ice cream flavor (like mint chocolate chips) and is topped with toasted marshmallow meringue for a truly memorable and impressive treat.


  • ¾ cup of sugar
  • 6 egg whites at room temperature
  • 8 cups lightly softened Neapolitan ice cream
  • 1 pound cake, sliced 1 "thick
  • ¼ teaspoon cream of tartar


First, line a 3 quart bowl with plastic wrap. Pour the ice cream into the bowl, making sure to mix the colors and press to eliminate the spaces.

Then, top with pound cake slices cut to fit the bowl so the ice cream is covered. Gently press the cake into the softened ice cream. Cover tightly and freeze for 3 hours or up to 2 weeks.

Beat egg whites and cream of tartar with a mixer over high heat until frothy, about 3 minutes. Add the sugar and continue beating until stiff peaks form.

Remove the plastic wrap and turn the cake over on a baking sheet. Cover with meringue. Place uncovered in freezer for at least 1 hour or up to 24 hours.

Preheat the oven to 500 ° F. Bake the dessert for about 3 to 5 minutes or until the meringue is golden brown.
