Easy Buckeye Recipe
A simple Buckeye recipe for deliciously decadent peanut butter chocolate candies.
- ½ teaspoon of vanilla
- 4 cups of powdered sugar
- 3 cups semi-sweet chocolate chips
- 1 ½ cup peanut butter
- ½ cup of softened butter
- 1 tablespoon of shortening or coconut oil
First, combine peanut butter, butter and vanilla with a mixer over medium heat until fluffy.
Then, gradually beat in powdered sugar until incorporated. Cool the mixture for 30 minutes.
Roll into balls and place on a pan lined with parchment paper. Cool the mixture for 30 minutes.
Combine chocolate chips and shortening in a small bowl. Microwave on 50% power for 1 minute. Stir and continue to microwave in 30 second increments until melted.
Place a toothpick in each ball of peanut butter and dip it into the chocolate, leaving a little peanut butter on top.
Place on a pan lined with parchment paper and refrigerate.

Do not use all natural peanut butter in this recipe.
