Hunters Chicken







A cheese barbecue favorite, Hunters Chicken is perfect for people who count calories or follow a diet like Weight Watchers!

INGREDIENTS

  • 8 slices of striped bacon
  • Flakes of sea salt and freshly ground black pepper
  • 4 large chicken breast fillets
  • 50g grated cheddar or mozzarella cheese

FOR THE BBQ SAUCE:

  • 2 teaspoons of honey
  • 100G of light or dark sweet brown sugar
  • 1 teaspoon of smoked paprika
  • 2 teaspoons of liquid smoke
  • 1/4 teaspoon onion salt
  • 1 tablespoon of Worcestershire sauce
  • 1/2 teaspoon garlic granules
  • 200g tomato ketchup
  • 100 ml of red wine or cider vinegar
  • 1/4 teaspoon freshly ground black pepper

INSTRUCTIONS

First, prepare the barbecue sauce. Place all the ingredients for the sauce in a medium saucepan and simmer for 5 minutes, stirring, until the sauce is smooth. Remove from heat and reserve.

Then, preheat your slow cooker (if necessary) Wrap 2 slices of striped bacon around each chicken fillet. Season the chicken with a small amount of salt and pepper and place them in the slow cooker.

Pour the sauce over the bacon-wrapped chicken. Place lid on and cook on HIGH for 2 1/2 to 3 hours or on Low for 6 to 7 hours.

Once the chicken is fully cooked, remove it from the slow cooker and place it in a dish that's too hot. The sauce will now be thinner from the chicken juices. Pour the sauce into a saucepan and simmer over medium-high heat for about 5 minutes to thicken.

Pour the sauce over the chicken and sprinkle with grated cheese. Place under a hot grill for a few minutes until the cheese has melted. Happy Cooking Time.
