Chopped Pie Cupcake - Almond cupcake with jam filled center and topped with brandy butter cream. A perfect cupcake for Christmas with family


For cupcakes

100 g soft butter

100g of castor sugar

2 large eggs

1 teaspoon flavorer

100 g self-expanding flour

25 g ground almonds

120 g minced meat

For brandy buttercream

75 g soft butter

75 g sugar

35 ml of brandy


1.Preheat your oven with a 190 ° C / 170 ° C fan.

2.Beat butter (100g) and granulated sugar (100g) until soft and smooth.

3.Add the eggs (2 eggs) one at a time, beating after adding each egg until well combined.

4.Add flavorer (1 teaspoon).

5.Sift the self-raising flour (100g) and ground almonds (25g) and blend until well combined.

6.Divide the mixture evenly between the 6 cupcake squares.

7.Use the rear of a teaspoon to soak within the center of every cupcake.

8.Add one teaspoon of hamburger to the middle of every cupcake (120g total).

9.Bake for 20 to 25 minutes until the highest of the cupcake is golden (unfortunately the skewer test didn't work because the center of the meat was ground).

10.Place it on a cooling rack to chill while you prepare the butter cream.

11.Prepare the buttercream by beating 75g of butter until smooth. Add powdered sugar (75g) one tablespoon at a time (as this helps keep the sugar from flying everywhere the place) and beat until well combined.

12.If you're employing a mixer, you'll skip to subsequent section by hand. Gradually add brandy (35 ml) to the butter / powdered sugar mixture. Beat each addition until thoroughly combined before adding more.

13.Place the buttercream within the pastry bag and place within the cupcakes.

14.Garnish with a couple of festive sprinkles.
