Slow Cooked Spicy Beef Curry







Absolutely bursting with flavor, this slow cooking spicy beef curry is amazing. Less than 500 calories, including rice, it is also slimming!

INGREDIENTS

  • 1 green chili, chopped
  • 2 teaspoons of grated ginger
  • 1 tablespoon of ground coriander
  • 1 onion, finely chopped
  • 500g / 17.5oz stewing beef, raw
  • 1 teaspoon of turmeric
  • 1 teaspoon of garam masala
  • 4 cardamom pods
  • 400g / 14oz baby potatoes, halved
  • 1 cup / 240 ml passata
  • 4 Roma tomatoes, peeled and chopped
  • 1.5 cups / 360 ml beef broth (or can use water)
  • 4 cloves
  • a few handfuls of chopped spinach
  • salt and black pepper
  • 2 garlic cloves, crushed
  • 1 tablespoon of cumin seeds
  • spray oil

INSTRUCTIONS

First, spray a deep saucepan over medium heat with spray oil

Then, add the onion and sauté until softened

Add the garlic, ginger, cumin seeds and turmeric and sauté for a few more minutes.

Add the cilantro, cloves, chili, cardamom pods, garam masala and chopped tomatoes with the beef and stir until well coated.

Add the broth and the passata, bring to a boil, reduce the heat to low then cover and simmer for 1 hour 30 minutes. Check halfway, to see if you need a little more stock

Add the potatoes for the last 30 minutes of cooking.

Once ready Add the spinach and mix well.

Season as needed with salt and black pepper

Serve with your choice of side.
