Swedish Almond Cake

Swedish Almond Cake is an easy dessert or brunch to make quickly with just a few basic pantry ingredients. And it is absolutely delicious!


  • 2 eggs
  • 1 cup of flour
  • 1/4 teaspoon of salt
  • 1/2 cup melted butter
  • 1/2 teaspoon of almond extract
  • 1 cup of vanilla sugar
  • 1 lemon, zested
  • 2 tablespoons of flaked almonds
  • 1 tablespoon of caster sugar (pearl sugar)


First, in a blender, mix the vanilla sugar with the zest of one lemon. Stir in the eggs, one at a time. Add salt and almond extract.

Then, stir in the flour and melted butter.

Pour the batter into a greased and floured 9-inch cake pan. Sprinkle with coarse sugar and almonds.

Bake at 350 degrees for about 25 minutes. Remove from the oven, let cool for a few minutes before unmolding.

Take advantage of the warm or ambient temperature!
