SWEETCORN AND LEEK SOUP







This vegan leek and onion soup is a recipe for winter. This is one of those healthy soup recipes made with modest vegetables like onions and leeks.

INGREDIENTS

  • 4 spring onions, thinly sliced
  • 1 onion, finely chopped
  • salt and black pepper
  • 2 medium leeks, sliced
  • 2 cups (480 mL) cooked corn (fresh, frozen or canned)
  • 4 cups (960 mL) vegetable broth / broth
  • spray oil

INSTRUCTIONS

First, spray a deep saucepan with spray oil

Then, add the onion and leek and sauté for about 5 min to soften

Season with salt and black pepper

Stir in corn and broth

Bring to a boil, cover and simmer for about 15 min.

Add 3/4 of the soup to a blender and blend until smooth.

Add again to the remaining soup and continue simmering for about 5 minutes until it thickens.

Pour into bowls and serve garnished with the chopped onion.
