Vegan Broccoli Fritters
Spicy smoked broccoli fritters with chickpea flour and spices. Quick and easy snack or breakfast.
Ingredients
- 1/4 cup cilantro
- 1/2 cup chickpea flour
- 2 cloves garlic
- 1 medium broccoli florets, (head) or about 3 1/2 cups florets
- 1/2 teaspoon ground cumin
- 1 teaspoon of salt
- 2 tablespoons of ground flax seeds
- 1/2 medium onion, roughly chopped
- 1/4 teaspoon cayenne pepper
- coconut oil, for shallow frying
Instructions
First, place the broccoli florets, onion, cilantro and garlic in batches in a food processor and mix until crumbly (resembling grains of rice).
Then, transfer to a large bowl. Stir in the chickpea flour, flax flour, cumin, cayenne pepper and salt. Mix well and press together as if you were forming a paste.
Heat the oil over medium heat in a large skillet. Form about 1/4 cup patties, place the donuts in the pan, reduce the heat to low and cook the donuts on each side for about 4 minutes until golden brown.
These are lightly fried and not fried. What I do is cover the pan after turning them over to make sure the donuts are cooked through in the middle.
Alternatively, you can bake on a baking sheet lined with parchment paper and sprayed with cooking spray in a preheated 400 degree Fahrenheit oven for 30 minutes, turning halfway through cooking. Happy Cooking Time.
