Cheesy Ground Beef and Rice Casserole
Picky eaters will love this Cheesy Ground Beef and Rice Casserole. Mom called it a busy day casserole because it's a quick and easy dinner.
- 1 large onion, diced
- 1 cup of cooked rice
- 2 teaspoons of minced garlic
- 1 cup of chicken broth
- 1 tablespoon of butter
- salt pepper, oregano, to taste
- 1 cup sour cream or Greek yogurt
- 1 cup of frozen peas
- 1 lb ground beef
- 1 14 oz can tomato sauce
- 2 cups grated cheddar cheese
First, melt butter in a large skillet over medium-high heat. Add the onions and, stirring often, sauté for a few minutes until they become tender and translucent.
Then, add the ground beef and garlic. Brown the ground beef completely, drain and return to the pan.
Reduce the heat to medium and season the beef with salt, pepper and oregano to taste.
Stir in the rice, peas, tomato sauce, broth and 1 cup of cheese. Simmer for 3 minutes.
Transfer everything to a 9 × 13 baking dish and bake at 350 degrees for 15 minutes.
Meanwhile, combine sour cream or yogurt with the remaining cup of cheese.
After 15 minutes, remove the casserole dish from the oven and spread the cream / cheese mixture evenly on top.
Return to oven and cook for another 15 minutes.
