Chocolate and Green Tomato Bread

This quick dessert bread recipe is a great way to use green tomatoes before the frost hits. Eastern Europeans love green tomatoes in everything from desserts to jams.


  • 2 eggs
  • 1 teaspoon of salt
  • 1 teaspoon of baking soda
  • 1 tablespoon of vanilla extract
  • 1/4 teaspoon baking powder
  • 2 cups of white sugar
  • 1 cup of vegetable oil
  • 1 tablespoon of cinnamon
  • 2 cups of green tomatoes, diced
  • 1 1/2 cup walnuts, chopped (optional)
  • 3 cups all-purpose flour


First, preheat the oven to 350 * F.

Then, grease two 9x5 bread pans and set aside. Tip: You may want to put a piece of parchment paper on the bottom or a nonstick sheet. Mine tend to stick to the pan a bit when using only cooking spray.

In a mixing bowl, combine the sugar and oil. Mix well.

Add the eggs, vanilla and salt. Mix well again, scraping the sides of the bowl if necessary.

Add the cinnamon, baking soda and baking powder.

Slowly add flour until blended. The mixture will be thick.

Add the diced tomatoes and mix well. The mixture will lighten from the moisture brought in by the tomatoes.

If you are adding nuts, add them now. (The photos are with nuts)

Pour half of the dough into each mold.

Bake for 1 hour or until a clean toothpick comes out of the center of the bread.

Leave to cool in the pan for 5 minutes, then remove from the pan and let cool on a wire rack. Happy Cooking Time.
