COCONUT BEEF MEATBALL CURRY






This delicious coconut beef meatball curry combines my favorite curry recipe with tender meatballs. This is a healthy and easy recipe for dinner that is easy to fall in love with.

INGREDIENTS

FOR THE MEATBALLS

  • 1 egg
  • ½ teaspoon of salt
  • 500g extra lean ground beef (ground beef)
  • 1/4 teaspoon onion powder
  • 1 garlic clove, crushed
  • 200g grated zucchini
  • Handful of finely chopped cilantro

FOR THE CURRY SAUCE:

  • 2 cups of beef broth
  • 1 cup frozen chopped green beans
  • 200g mashed sweet potatoes
  • 2 tablespoons of medium curry powder
  • 1.5 tablespoon tomato paste
  • 1 teaspoon of red pepper flakes (optional for extra heat)
  • 1 cup (240 mL) coconut milk (whole - canned)
  • fresh cilantro, chopped for garnish

INSTRUCTIONS

First, add the ingredients for the meatballs to a large bowl and form about 20 meatballs and set aside.

Then, add the mashed sweet potatoes, curry powder, beef broth, red pepper flakes and tomato paste to a deep skillet over medium heat and stir until combined and become a smooth sauce.

Put the meatballs in the sauce (you don't need to brown them first), cover and simmer for 15 minutes.

Stir in the coconut milk and green beans and simmer without the lid for 5 minutes. If you prefer a more flavorful curry, you can also add a little more broth at this point.

Serve, garnish with coriander (optional) and enjoy !!
